Healing Broth

Prep Time 10 mins / Cooking Time 1 hour / Serves 4-6

Ingredients

  1. 2 large or 4 medium-sized carrots chopped

  2. 1 large sweet potato or yam, cubed

  3. 2 stalks of celery, roughly chopped

  4. 1 large or 2 medium onions, sliced

  5. 1 cup of flat-leaf (Italian) parsley (or curly parsley), finely chopped

  6. 1 cup of shiitake mushrooms, fresh or dried

  7. 1 large or 2 medium-sized tomatoes, chopped

  8. 8 cloves of garlic, minced

  9. 1 inch of fresh ginger root, keep skin on, chop

  10. 1 inch of fresh turmeric root, chopped

  11. 12 cups of water

Optional: Chili peppers or red pepper flakes (I used 1/2 tsp of red pepper flakes)


Preparation

Place all the ingredients in a pot and bring to a gentle boil. Turn heat down to low and allow to simmer for about an hour. Strain and sip for a mineral rich, healing and restorative broth.

TIPS

A GREAT thing about this broth, you can store it in the fridge up to 4 days, or you can freeze it. I usually make double the batch to save time. It is so adaptable, this is my all time favorite vegetable broth for making Vegetable Pho, Tom Ka Soup etc. It is great on its own too. When anyone is feeling run down, or flu-like symptoms coming on, this broth is ideal.


It makes a wonderful gift. Offer this to someone who is recuperating from an illness or hospital stay. 


Great Additions are:

2 tsps of Chaga Mushroom powder from Vimergy

1 tab of Atlantic Dulse Flakes
