Raw Spinach Soup

Prep Time 10 mins / Serves 2



Ingredients

  1. 1pint of grape tomatoes or 3 plum tomatoes or 2 large heirloom tomatoes

  2. 1 bag of baby spinach or 1 bunch of leafy spinach

  3. 1 stalk of celery

  4. 1 clove of garlic

  5. 1 whole orange or juice from 1 orange

  6. 1-2 basil leaves or a few sprigs of cilantro

  7. 1/2 avocado

  8. for garnish: Mesclun mix or sprouts of any kind

  9. 1/2 cucumber spiralized if desired as the base












Preparation

  1. 1.Blend orange/juice, tomatoes, celery and garlic, adding a handful of spinach at at time until well blended.

  2. 2. Add the avocado and herbs and blend until creamy and smooth.

  3. 3. Serve right away, as it’s best eaten soon after preparation.

TIPS

This is so easy to make in the blender. I pour this over a big bowl of spiralized cucumber, to make it even heartier. I use a whole orange instead of juice, to make it slightly thicker.
